Mix the softened butter with the sugar until it looks like it’s foaming. Add in the egg, and whisk until it looks like the strangest omelette you’ve ever made. I hope.

In a separate bowl, mix the flour, oats, baking powder, salt and cinnamon. If you have some fleur de sel, use that. Fold in the wet mixture with a spatula. Once you’re done, let the sultana rain upon the batter in a glorious gesture. Mix well, but not too much: it should be a rather rough batter.

Preheat your oven at 180°C. On a lined baking tray, set apart balls of about 2 tablespoons of dough. You can flatten them a bit, they won’t spread much while baking.

Bake for 15-20 minutes, until set on the sides, golden all around and still moist in the center. Let them rest for 5 minutes. Devour like the animal you are.
